Filet Mignon

Filet Mignon w/ Caprese salad and sauteed green beans

Purchase 2- 6 to 8 oz. Filet mignon (prime or otherwise)
Organic or locally grown red tomatoes
Fresh or homemade mozzarella
Fresh green beans
Extra virgin olive oil and balsamic vinegar
Garlic
Salt, Pepper, Cayenne, Garlic powder, onion powder.

Heat a sautee pan with 1 tbs of evoo
Season filet with salt, pepper, cayenne, garlic and onion powder on both sides
When pan is hot place filets in pan to sear
Cook 5-7 minutes per side for medium rare

In a seperate pan add 1 tbsp of evoo
Add cleaned green beans and season with salt and pepper
Toss often and sautee until there is a slight bite to the beans
Add 1 minced garlic clove to the beans 1 minute before removing from the heat

Slice fresh mozzarella and tomatoes
Layer on a plate and drizzle with evoo and balsamic vinegar
Season with s&p
