Warm Quinoa Salad




 
Warm Quinoa Salad

Cook 1 cup of quinoa according to directions on package
While preparing quinoa sautee fresh green beans in 1/2 tbsp of evoo and 1/2 tbsp of butter until tender
Add the juice of one lemon
Season with salt and pepper
Toss in quinoa the last 20 seconds of cooking beans
Add 1 more tbsp of evoo
Serve topped with goat cheese
