Grilled Shrimp Wedge Salad

 

Grilled Shrimp Wedge Salad
Purchase any size of fresh shrimp from your grocer
Skewer the shrimp (4-5 to a skewer)
Marinate the shrimp in the juice of one lemon, drizzle of extra virgin olive oil, salt and cracked black pepper.
Marinate no more than 30 minutes
Grill skewers about 2-3 minutes per side or until shrimp develop a pink color

Wedge Salad
Head of romaine or iceberg lettuce halved
Top with
Grape tomatoes
Steamed sweet corn cut off of the cob
Fresh diced avacado
Tortilla strips or crushed tortilla chips
A squeeze of fresh lemon juice and chipotle ranch dressing (store bought or homemade)

Chipotle Ranch Dressing
Purchase store bought ranch 
One small can of chipotle in adobo
Add 1 chipotle to food processor with a dab of adobo and puree
Once pureed hand mix blended pepper into the ranch dressing and serve.

When shrimp are finished cooking add to the salad and serve.

Halibut with Garlic Mash and Tomato Relish


Serves 2

Buy 2- 5 oz Halibut Filets
Season both sides of halibut with salt and pepper
Heat skillet and add 1tbsp vegetable oil
Sear both sides of the filet, about 3 minutes on each side

Tomato Relish
1 lg roma tomato diced
1 tbsp of capers
1 tsp of sliced shallot
1 clove of minced garlic
2 tbsp extra virgin olive oil
Juice of 1/2 a lemon
Pinch of salt and pepper
(Can be made ahead of time, let relish marinate while preparing the rest of the meal)

Garlic Mash
2 large red potatoes or 4 small
Peel skins if desired
Dice in large cubes
Add to a pan, cover with water, and bring to a boil
Cook until fork tender

While potatoes are cooking:
Place 2-3 large garlic cloves in an aluminum foil pouch drizzled with olive oil and roast in oven on 500 degree for 25- 30 minutes
Once roasted the garlic will pop right out of the skin
Add salt to the garlic cloves and mash with butcher knife until garlic turns into a paste

Drain potatoes and mash, add roasted garlic paste, 1/4 cup of sour cream, 1tbsp of butter, salt and pepper to taste.

Finish by topping fish and potatoes with tomato relish.
